Fine Food Australia Exhibition Stand Builders
Fine Food Australia 2027 runs from 6 to 9 September at ICC Sydney. It is a trade-only show for foodservice, retail and hospitality buyers, and the organiser reports more than 23,000 visitors, seven in ten with purchasing power. Brij & Co designs and builds custom and modular stands for Fine Food exhibitors, built in our Sydney workshop around the show's height limits and the practical needs of a stand that serves food.

Where Fine Food Australia is held
Fine Food Australia moves between Sydney and Melbourne. The 2025 show was at ICC Sydney, the 2026 show was at MCEC in Melbourne from 31 August to 3 September, and the 2027 show returns to ICC Sydney. We build for both cities: Sydney stands come straight from our Ingleburn workshop, and Melbourne stands are supported by our Melbourne production facility.
Some exhibitors also take space at Food & Hospitality Week in Melbourne (2 to 4 May 2027 at MCEC) or show to the public at the Good Food & Wine Show, which runs in Melbourne, Sydney, Perth and Brisbane. A modular stand built for Fine Food can often be resized for those events, which spreads the cost over a year of shows.

The stand rules that shape a Fine Food design
The organiser's exhibitor manual sets a hard 5 metre height limit for all stands, with no exceptions. Anything over 2.5 metres, including perimeter walls, needs the organiser's approval, and walls over 2.5 metres that face a neighbour must be finished on both sides. Open sides of the stand must stay at least one-third open.
Space-only exhibitors build their own walls, and stand designs are submitted through the online manual before the show. Double-storey stands need engineering certification and sign-off before anyone can use the upper level. Builders and their crews complete the venue induction through the organiser's induction portal before move-in.
We read the current manual for your year before we design, design to the limits rather than against them, and lodge the plans for you. The manual gives the plan deadline as several weeks before the show, so the design needs to be locked early.
What a working food stand needs
Sampling counters that survive four days
Counters take spills, hot pans and hundreds of hands a day. We use laminate or solid-surface tops, sealed edges and kick plates that can be wiped down, with storage underneath for stock, cups and bins.
Power, water and cold storage
Induction cooktops, coffee machines, fridges and display chillers all need planned power. We map every appliance before ordering electrical so circuits are not overloaded on day one, and leave service access to plumbing and bins.
Product on show, not just on a shelf
Buyers at Fine Food are scanning for packaging and range. Lit shelving at eye height, clear category signage and a product wall that photographs well do more work than a big logo alone.
A place to talk orders
Many deals start on the stand. A small meeting area or bar-height table away from the tasting queue lets your team take down details without shouting over the aisle.
Timeline for a Fine Food Australia stand
Working back from a September show:
- April to May. Book your space and send us the floor plan, stand number and open sides.
- May to June. Concept design, 3D render, revisions and quote.
- July. Final drawings and plan submission through the exhibitor manual, plus engineering if the stand has a second level or tall structures.
- July to August. Fabrication, printing and full pre-assembly in our workshop.
- Move-in. Custom builds go in during the scheduled move-in before opening. Our crew installs, tests power and appliances, and hands the stand over clean.
Fine Food Australia Sydney: building at ICC Sydney
When Fine Food Australia is in Sydney it fills the exhibition halls at ICC Sydney in Darling Harbour. Our workshop in Ingleburn is under an hour away by truck, so stands can be loaded the morning of move-in rather than sitting in a freight depot, and spare parts or a forgotten shelf are a short drive away rather than an interstate courier.
ICC Sydney has its own rules on top of the organiser's manual. The venue's custom stand permit form lists a 5 metre maximum build height in Halls 1 to 4 and 4 metres in the Gallery, asks about double-storey stands, and notes that stands with significant ceilings may need a fire engineer's sign-off paid by the exhibitor. We account for these when we design, so the stand does not need to change after it is lodged.
What a Fine Food expo stand costs
The floor space itself is booked from the organiser. For the stand, these are typical ranges from our exhibition stand cost guide:
| Stand | Typical range | Notes for Fine Food |
|---|---|---|
| Custom 3m x 3m | $5,000 to $15,000 | Room for one sampling counter and a product wall |
| Custom 3m x 6m | $10,000 to $25,000 | Counter, product wall and a small meeting table |
| Island, 6m x 6m and up | From about $25,000 | Bar, cool room or storage core, meeting area |
| Double-decker | From $45,000 | Needs engineering and organiser sign-off; within the 5m limit |
Food stands often need extra power circuits, water and waste, which are ordered through the event and itemised separately in our quote.
Food trade show booth ideas that work
Let the product be the sign
A wall of your packaging, lit from behind or within the shelf, reads from further away than a logo on a blank panel. Group it by range so buyers can see the whole offer at a glance.
Show the kitchen
For foodservice brands, a working cooking station with a mirror or screen above it lets a crowd watch a chef demo without crowding the counter.
Separate tasting from talking
Put the tasting counter at the aisle and the order table further in. Casual samplers move on, and serious buyers have somewhere to sit.
Plan for four long days
Fine Food runs Monday to Thursday. Staff need storage for bags and stock, a bin store and somewhere to restock out of sight.

I could not recommend Brij and Co enough! We've worked with a few stand builders over the years, but Neil and the team are the best at what they do.
The stand was beautifully executed, effective, and delivered at a very reasonable price.
They perfectly brought our vision for the stand to life. Since upgrading from more basic setups, we’ve been noticeably busier at shows, with customers often lining up around the stand to engage with our products. As a start-up surrounded by much larger, more established brands, that kind of impact is incredibly valuable.
The team is also warm, friendly, and super helpful during the stressful bump-in process, which is also a huge plus.
We had such a great experience working with Brij & CO for our stand at the Sydney Hair Festival. The booth was beautifully executed, and the quality and attention to detail really stood out. Everyone loved it!!
Neil was always very responsive and easy to deal with, and Anna was incredibly supportive and helpful throughout the process. They also created oversized props for us, which turned out amazing and made a big impact at the event.
Looking forward to next year's expo!
Brij&Co have built our (Tilley Soaps) Gift Fair stands for several years now and always do a fantastic job. Professional, reliable, and great attention to detail. Thanks to Neil and the team, we highly recommended.
We had such a beautiful experience with Brij & Co. They could bring my vision to life. Organising those type of events can be stressful but they made the experience very pleasant and easy. I will definitely be using their services again BKT (Beauty Keeps Transforming) in our next hair and beauty expo. Thank you so much Anna and Neil.
Brijnco is hands down the best fair stand manufacturer we've worked with. We were impressed by their innovative designs and commitment to delivering exactly what we needed for our event. The team at Brijnco is not only creative but also highly responsive. They listened to all our requirements and ensured everything was perfect. If you need a stand that stands out, Brijnco is your go-to choice!

When and where is Fine Food Australia 2027?
Fine Food Australia 2027 runs from Monday 6 to Thursday 9 September 2027 at ICC Sydney. The show alternates between Sydney and Melbourne.
What is the height limit at Fine Food Australia?
The exhibitor manual sets a 5 metre maximum for all stands, with no exceptions. Anything above 2.5 metres needs organiser approval.
Can I build a double-storey stand at Fine Food Australia?
Yes, with engineering certification and organiser sign-off before the upper level is used. Allow extra lead time for the engineering.
How long does a custom Fine Food stand take?
Allow 8 to 12 weeks from brief to show for a custom stand. Plans go to the organiser several weeks before the event, so start design by June for a September show.
Can the stand be reused at other food shows?
Yes. We often build Fine Food stands from modular frames with custom joinery, so they can be resized for Food & Hospitality Week or the Good Food & Wine Show.
How much does a stand at Fine Food Australia cost?
For the stand itself, a custom 3m x 3m usually costs $5,000 to $15,000 and a 6m x 6m island starts from about $25,000. Floor space, power, water and rigging are booked through the organiser and venue.
Is Fine Food Australia in Sydney or Melbourne?
It alternates. The 2026 show was at MCEC in Melbourne and the 2027 show is at ICC Sydney. We build for both cities.
Do you build shell scheme upgrades for Fine Food?
Yes. If you have booked a shell scheme stand, we can add printed walls, shelving, a counter and lighting so it reads as your brand.
